Flat-leaf Italian parsley has more flavor than its curly cousin, with bright, clean, slightly peppery leaves that finish soups, salsa verde, gremolata, and grain salads. It is a biennial that grows lush in the first year, and it does well in a sunny kitchen window or a patio container. Ours is grown in the greenhouse without synthetic pesticides and arrives in a 4" pot with plenty of leaves to harvest right away. Cut the outer stems first and let the center keep growing. Parsley contains compounds that can bother cats and dogs in large amounts, so keep it out of pets' reach.
